There are other ways of building Debian from the ground up but why bother? Debian already lets you remove non-essential packages and replace default ones with alternatives. The whole point of using a distro is that you don't have to do everything from scratch.

You can try Slackware if you want to start with a barebones system and build it up, but in my experience, Debian is very good already at doing that.
