LTSP would give you the ability to have sound on your thin client, rather than the video-only you'd get with X11 forwarding. LTSP can use old desktops/laptops as thin clients. They only need to be able to PXE boot. I've never tested it with a Mac, though, so I don't know if there are any important differences there. I have used Pentium 3 desktops as thin clients, and they do work. But I'd recommend something more modern with more RAM and a decent video card.
