It works more or less the same way it does without encryption. The
only difference is that /boot has its own unencrypted partition which
resides on /dev/sdx1 for example as opposed to something like lvm. So,
grub loads kernel/initrd from the unencrypted /dev/sdx1, and scripts
in the initrd deal with opening the rest of the
encrypted/lvm/whatever volumes.
