for raid software you can use mdadm. Do you want install system on raid or do you want use raid for data? before creting raid array, write 0 on each sector with dd (man dd). There are different paper on the web for this.

No, it won't. As far as I know, mdadm will only work with Linux's
software RAID implementation.

If you don't need the RAID array, just treat the disks as blank. That
is, put a new partition table on them and mkfs them. Windows 7's RAID
won't have put anything permanent on the disks.
