What you're seeing is not the screen saver (since you've disabled it)
but the screen goes blank after a period of inactivity - this is
controlled by a power management software, in your example that would
be GNOME Power Manager [0]. I don't use Gnome so can't help you with
it I'm afraid.
A generic way to disable screen going blank would be to use xset.
% xset s off
