I think you must be thinking of the Chromium in Stable Squeeze which
released with version 6.  That isn't the one under discussion.  Stable
is stable and so that one won't be changing by intent.

The Chromium browser under discussion is the current one from Sid.  It
is normally up to date and current.  However at this moment things are
in a bad state due to the "Aw, Snap!" crash with the current version.
Hopefully that will eventually be sorted out and things will be back
on track again.

If that works for you then great.  However do remember that Ubuntu is
not Debian and when you "cross the streams" sometimes bad things
happen.  In that aircraft you are a test pilot for every flight
evaluating its flight characteristics.  Be sure to wear your parachute
and know where the seat ejection handles are located. :-)
