I dunno for CentOS, but in Debian lenny (which uses GDM) is located there:

sm01@stt008:~$ ls -l /etc/gdm/
total 32
-rw-r--r-- 1 root root 3311 sep 22 09:01 gdm.conf
drwxr-xr-x 2 root root 72 nov 14 2009 Init
-rw-r--r-- 1 root root 10842 mar 12 2009 locale.conf
drwxr-xr-x 2 root root 224 nov 14 2009 modules
drwxr-xr-x 2 root root 80 nov 14 2009 PostLogin
drwxr-xr-x 2 root root 72 nov 14 2009 PostSession
drwxr-xr-x 2 root root 72 nov 14 2009 PreSession
-rwxr-xr-x 1 root root 4182 mar 12 2009 XKeepsCrashing
-rwxr-xr-x 1 root root 6264 mar 12 2009 Xsession

So you can just edit "gdm.conf" file and set the desired max connections.

If yours is not placed there, you can find it with the command I told you:

find / -name "gdm.conf" -print
