After you do that, there's a button (called "Sessions" IIRC) in the login window (still from Gnome, probably) that will let you switch around between the window managers.

I'd keep Gnome around, at least until you're comfortable with the new one. Besides it might be easier to reinstall from scratch than to try to get all the pieces of Gnome off your disk.
