How to change the defaults for the Xserver without modifiying the xorg.conf directly?

i just re-installed a debian on a server, and as it seems i am not able to change the
xserver switches anymore...
a dpkg-reconfigure xserver-xorg asks me 0 questions...
i would like to throw out that extremely annoying nodeadkeys and switch that damnable
caps-lock key to a less destructive function...
previously this was possible through installation or reconfiguration, but seems not anymore....
problem is that if i tweak the xorg.conf directly this will affect the behaviour of all following upgrades...
so is there any easy way to alter the debconf database to insert those switches?
