One JOB one TOOL!
"fetchmail" is fetching messages and deliver (by default) to localhost
or /var/spool/mail/$LOGNAME
"procmail" is a Mail-Delivey-Agent (MDA).
So you could setup "fetchmail" with:

default
mda "/usr/bin/procmail -d %T"
...
poll ...
...
----8<-----------------------------------------------------------------
and "procmail" with
----8<-----------------------------------------------------------------
MAILDIR=${HOME}/Maildir
DEFAULT=${MAILDIR}/
LOGFILE=${HOME}/log/fetchmail.`date +%Y-%m-%d`.log
----8<-----------------------------------------------------------------
which will deliver always to ~/Maildir/
if you do not setup additional recipes.
