I don't know if you know about it already, but xen kernels are
available in etch.  Install the xen-linux-system-2.6.18-4-xen-$arch
package for an entire xen system.  The kernel is available in the
linux-image-2.6.18-4-xen-$arch package.

If you want to build your own, install the kernel-package package and
check out its documentation. Googling for [debian kernel] results in
hundreds of hits about the kernel-package system.
