Hmm.. I have never tried that, i set my timeout for 300 seconds so I have 5 
minutes to choose or else the default fires up.

 This is what I have in my menu.lst for the image.

foreground = ffffff
background = 000000
splashimage = (hd0,2)/boot/grub/debsplash.xpm.gz

There is a grub-splashimages package that has a few images in it that you can 
use. It may have info on using your own images too.
