Hi Mike,
there is a debian-amd64 port. so 99% of what you want will work.
BUT THERE ARE EXCEPTION that have not made the jump to 64bit and need to
be run in a 32bit chroot.
here are a few:
win32codecs-any multimedia apps that use this will not work in 64 bits
OpenOffice is still not 64bit.

As far as openoffice, there is a port in amd 64 there:
http://people.debian.org/~rene/openoffice.org/2.0.3/amd64/

And you can run , I guess, all 32 bits apps if you install 32 bits libraries, or in a chroot
