Remove the symlink which causes your installed display manager (gdm,
kdm, or xdm) to start:
rm /etc/rc2.d/S99gdm
rm /etc/rc2.d/S99kdm
rm /etc/rc2.d/S99xdm
This will leave you with a complete GUI that simply doesn't start on boot.
