If you are planning on doing LVM, use XFS. XFS will allow you to resize
a filesytem on the fly - no need to umount, resize, remount, etc. I've
found this to be a very handy feature:

$ lvresize --size +1G /dev/vg0/foo
$ xfs_growfs /foo

done. sweet, no?
