In response to your questions:

1) You can disable this by either removing the gdm init script from run
level 2 or (and probably preferable) removing the gdm pacakge:
apt-get remove gdm
You may also have xdm installed so you may want to remove that as well.
It may indicate that you are going to remove an additional package,
something like gnome-desktop, this should be safe as this package is a
skeleton package for installing a working gnome desktop.

2) As for if it's safe to install the nvida driver. I would probably
assume it would be. The easiest thing to do is try it out, make sure to
save all files that you overwrite so that you can go back in necessary.
I've done this with my Matrox G550 drivers. The only other thing to note
is that if you do overwrite files you will probably need to redo the
installation again if the package that owns those files is ever
upgraded.
