I would recommend the loop-aes package, available in Debian. You can use AES or some other cipher with it. Here are a few useful links:

I was using cryptoloop before, but often had system lock-ups under heavy disk activity (like running VMWare on top of encrypted partition). Never had problems after switching to loop-aes.
