I'm no expert but in my experience grub will default to the first kernel
entry in the automatic kernels list.  I've never messed around with
default as such.  If I wanted windows to be the default (if I was truly
masochistic), I'd move the windows stanza to before the automatic
kernel list.  Otherwise, I change the order with the automatic kernels
list to ensure that grub defaults to my preference ... and then run
update-grub just to make sure it doesn't throw an error.

The 'Grub in Debian Howto' and 'Grub from the ground up' are well worth
printing out and keeping by you for when you have a booting problem (as
well as the location of the mbr and your working kernels.
