Hi Gerome,
What about hiding the Gnome panel? If you right-click on it and select
auto-hide it may go away while you're viewing full-screen? You don't
have to do that in KDE (I just tested it) as long as all the other apps
you're running are minimised but maybe that's the way around it in gnome.
