If you just install kernel-patch-debian and look at the changelog (or
better yet, go to packages.debian.org and download it from there) you
can see what patches were applied.

But anyway, I'll list a couple that I remember:
- recent security patches (kernel.org releases a new version, doesn't
patch older ones I think)
- removing of non-free bits (binary blobs etc aren't allowed in debian main)
- ipsec patches used to be included, not sure about the current status.

In any case, a list is in the changelog.
