Make sure you have a rescue disk that works (e.g. knoppix, rip, tomsrtbt),
and preferably a backup!

I would go ahead and repartition with PM or parted,
and then use the rescue disk to fix everything up.
that might not be the best way, I don't know.

You might like to think about using lvm.

yes, I think you could use symlinks to do this.
give it a go and see if it works.
