Or you can use the command line version, which is "tethereal".  Not 
quite as nice as the GUI ethereal, but still nicer than tcpdump.

Of course you can dump to file with either tcpdump or tethereal on the 
server and then transfer them to a machine with a GUI and load them up 
in Ethereal to browse at your leasure...
