Such a simple solution. My /etc/network/interfaces file now looks like:
# /etc/network/interfaces -- configuration file for ifup(8), ifdown(8)
# The loopback interface

iface lo inet loopback
auto eth0
iface eth0 inet dhcp
pre-up ifconfig eth0 hw ether xx:xx:xx:xx:xx:xx
address 192.168.1.1
network 192.168.1.0
netmask 255.255.255.0
broadcast 192.168.1.255
