Maybe something (which has nothing to do with apache) consumes all your
memory?

1.
Have a look at /var/spool/cron and /etc/cron*

Maybe someone else on a different computer has a cronjob to get
something from your webserver at that time. Have a look at the apache
access(!)-log. What is started?

3.
You could start a script via cron one minutes before the crash, capture
"ps faux" (i.e.) every second for two minutes to get an impression what
is happening.
