You can run the configuration script again. 
# eximconfig

You must first decide how you want to process your mail. Some
clients can POP messages from your provider and send messages
directly to the SMTP server at your provider.

You have many different options. If you use Mozilla, you won't need
any system configuration to speak of. If you want to run your own
mail-server and treat mail as if it's local, you'll probably need a
combination of fetchmail (+procmail) and a configured exim.
Additionally you might require a pop- or imap-server.
