GNOME 2 doesn't include a menu editor, yet.  Soon, apparently...

Nope, that's GNOME 2.  It's pretty crippled right now...More features
will be added later on and maybe someday it will be as configurable as
GNOME 1.4.

Viewports were pretty much removed from both sawfish 1.1 and GNOME 2.

Adding these lines to your .sawfishrc will bring back viewports to some
extent, but edge-flipping is gone forever, by the sounds of things.

(setq customize-command-classes '(default viewport))
(setq viewport-dimensions '(3 . 3))

Yes.  GNOME 2 has been designed to much simpler and less configurable
than GNOME 1.4 was, to make it easier to use.  Some people like this,
but I sure don't...I've switched to sawfish+gkrellm+fspanel for now,
with the GTK1.2 version of sawfish on hold.

OT, have you ever used fspanel with sawfish?  I can't figure out how to
get sawfish to match on the fspanel window and enable sticky,
viewport-sticky and avoid mode on it.
