Probably not with gv, exactly, but gv is a wrapper around ghostscript
anyway. If you want no-frills Postscript (or PDF) display, use gs
directly. With a combination of commandline flags and some scraps of
Postscript initialization, I'm sure you can get satisfactory full screen
display. See the gs man page (or possibly info pages) for details.

Unless you are truly dedicated to the Open Source Way, I recommend using
PDF (I think there is a pstopdfm or pstopdf script installed with
ghostscript, if you currently have Postscript) for whatever you want
displayed full screen, and use Acrobat Reader. I have had great success
with using its full screen mode for presentations (LaTeX-generated
slides converted to PDF).
