Look in to netatalk. Free, open source, provides AppleShare file and
print services. It can be either an AppleTalk server or an AppleShare IP
server. Setting up TCP/IP-only is a lot easier than setting up
AppleTalk, if your Macs can use it (I think it's standard on Mac OS 8.5
and newer, but I could be wrong) that's the way to go.
Of course, OS X is a lot easier since it's chock full of UNIXy
goodness... And I think it actually ships with the necessary client
software for mounting your existing Samba shares.
