I would set the priorities of testing and unstable to something lower 
than 100 to prevent automatic installs from those releases if you want 
to keep stable. More information on priorities can be found in the 
manpage apt_preferences.

You can then install packages from different releases by simply using

apt-get install package/testing
apt-get install otherpackage/unstable
