you can recompile openldap to exclude odbc support, from a quick
search it seems the odbc library is the one that wants gtk/X:

I haven't noticed any difference from disabling odbc on my LDAP servers,
maybe I am just not using that functionality.

(I do compile all my ldap servers from source to enable SSL/TLS)
