It depends on the fonts that are used. Mostly, programs will use the
default Gtk font, but there are some exceptions.

I don't use Evolution myself, so I have no idea about this one. Sounds
very strange, though.

This depends on the font used to display the cell. It is set in the
toolbar. Check that the font supports the ISO8859-1 charset (e.g., using
the Gnome Font Selector. Helvetiva should work.

I use ISO8859-15 myself,
and I get this:

Gdk-WARNING **: Missing charsets in FontSet creation
Gdk-WARNING **:     ISO8859-15

So you can check if you get something similar, when running gnucash from
the command line. I have no problems displaying most characters,
though.

I use gnucash as well. You can set some fonts in Settings:Preferences,
in the Register tab, but I haven't found where the report fonts are set.
I have no trouble displaying the á etc there, just the euro symbol.
