I'm pretty sure u've already got exim running, might need to reconfigure it, thats a perfectly good MTA (for sending the mail)
then just add a user on the machine for each recipient and apt-get install qpopper
that will give you POP mail collection from the server...
if your mail goes to an ISP then you'll need fetchmail to bring it to the local host....
that make sense?
