With a shell script like:

#!/bin/sh
stty 9600 < /dev/ttyS0
stty ixon < /dev/ttyS0

etc.

stty -a < /dev/ttyS0 will show you all the current values, and man stty
will tell you what they all do (but ignore -F device which does nothing).
