Try: $ update-alternatives config x-window-manager

This takes a little more work, since you'll have to '--install' the
local version first. But, since there are pretty current versions of
gnome in potato you might use those. However,

$ update-alternatives --install /usr/bin/x-window-manager \
  x-window-manager /usr/local/bin/gnome-session 50 \
  --slave /usr/share/man/man1/x-window-manager.1.gz \
  x-window-manager.1.gz /usr/local/share/man/man1/gnome-session.1x.gz

might be close to what you want.
