You have to install the mime-support package and of course some audio-player.
I use xanim for this and I have in /etc/mailcap stuff like this:
audio/basic; xanim +Ze %s; test=test "$DISPLAY" != "";
description=AU Audio Format; nametemplate=%s.au
(one line)
It was added by an installscript of xanim, no manual editing necessary.
