I don't know anything about exmh unfortunately. In mutt for example,
you can do

my_hdr From: hamish@debian.org (Hamish Moffatt)
my_hdr Reply-To: hamish@someotheraddress.com

and it will do that. I use the From one to put the debian.org
address on my mail.
