You surely want to put something like
my_hdr From: sbaums@stud.uni-goettingen.de (Stefan Baums)
in your ~/.muttrc - internally Mutt will do the "Name <>" change.
Otherwise, use http://www.math.fu-berlin.de/~guckes/mutt/ as a starting
point for further tuning your ~/.muttrc ...
