Uh, that's like asking why you can't talk French on the phone.  You can! 
You just have to know French.

Ethernet is the communications medium.  (i.e. telephone system)
IPX is the communications protocol.  (i.e. the language spoken on the
telephone)

The nice thing is that you can "speak" multiple "languages" at the same
time on the same "telephone".  i.e. You can configure TCP/IP (Linux
default), IPX (Netware), and others to all work at the same time on the
same ethernet interface.
