You could also add
DefaultColorDepth 16
to your Screen section of the XF86Config file.
Here's the relevant parts of my XF86Config:

Section "Screen"
Driver "Accel"
Device "Primary Card"
Monitor "Primary Monitor"
DefaultColorDepth 16
SubSection "Display"
