Ctrl-Alt-+ and Ctrl-Alt-- (Control-Alt-Plus/Minus) I believe.

In XF86Config, for a given color depth, the modes occur in the order they
are listed.  I always put 1024x768 or 800x600 first (the mode I use on
my 17" monitor (at work) or 15" monitor (at home).

These settings are under the "Server" section as I recall.
