Dass die atime aktualisiert wird, liegt nicht in rsnapshots (oder
rsyncs) Hand. Das macht das Dateisystem automatisch. Man könnten ihm das
global abgewöhnen (Mount-Option noatime), aber dann funktioniert das mit
mutt auch nicht mehr.
Die beste Lösung ist wahrscheinlich, Deine mboxen auf Maildir
umzustellen.
