Habe mich an den Hinweis in der dhcpd.conf gehalten und alles in
Richtung "local7" umgebogen.
dhcpd.conf:
,----------------------------------------------------------------
| # Use this to send dhcp log messages to a different log file
| # (you also have to hack syslog.conf to complete the redirection).

| log-facility local7;
`----------------------------------------------------------------
In der syslog.conf habe ich erst "local7" in meine gewünschte
Logfile umgelenkt und dann mit "local7.none" verhindert, dass die
globale syslog-File etwas abbekommt.
syslog.conf:
,----------------------------------------------------------------
| local7.* /var/log/dhcp.log
| local7.none
`----------------------------------------------------------------
Jedenfalls sind bei mir nun alle dhcp-Einträge *nur* in
"/var/log/dhcp.log".
