Several ideas, none all that great:

1. Change your machine login to iehrenwald.
2. Make a custom header  "Reply-to: iehrenwald@earthlink.net"
3. Put "From:" in default-composer-hdrs and edit it each time.
4. Find an email-only host which will let you use "ian@somewhere.com" and
forward to your ISP account.

Possibly some mail program other than pine will allow you to configure the
From: entry.

You might be able to do something in the configuration of your MTA, but I
think that will only affect the envelope header, not the message header.
