I'm going to change from kernel 2.6.8 to 2.6.7, but I've heard that the

I don't plan on ever returning to kernel 2.6.8, can I remove it?
OS: Debian Sarge

Sure. As root run dpkg --purge kernel-image-2.6.8-i386 (or whatever version you installed). Just make sure you boot into your new kernel before you attempt to remove the old one.
