Your /etc/apt/preferences should look something like this:

 Package: *
 Pin: release a=stable
 Pin-Priority: 1001

 Package: *
 Pin: release a=testing
 Pin-Priority: 900


I've had good luck doing this, but your mileage may vary. After
the downgrade you may want to install deborphan to remove
unreferenced libraries, etc. Certain packages have been
problematic in the past (dpkg).
