More important is which are configured to serve what to each subnet.
In this case where you have two independent servers with NO
co-operation between them, you MUST ensure that the ranges they will
offer clients addresses from do NOT overlap. Ie, except for
statically addressed clients, the two servers must never be able to
offer the same address - otherwise sooner or later you will find two
clients being offered the same address, one from each server.
The other issue is that if both servers are offering addresses in the
same subnet, each client will be offered two different addresses, and
may randomly change addresses depending on which it thinks is the
best offer at any time (though this should NOT occur when it is
renewing an existing lease).
You can of course configure things so that only one server is
offering leases in any subnet.
If you need more information then you will have to detail what you
are trying to achieve, and why you want to run two servers on the
same network.
