Got it. I've added

--extra-repository="deb http://deb.debian.org/debian experimental main" --add-depends="ruby-all-dev (>> 1:2.7.6~), ruby3.0, ruby3.0-dev"

to my sbuild command. If you know of something more elegent,
please let me know :)
