ok, I've been talking to the Gnome maintainers, and it seems that
after gnome has made the list of available applications for some mime
type, then it selects as default the first one in alphabetical order.

I've been told that you can change the application to be used via:
"right click on a mp3 in nautilus, properties, open with...".

also, as it may make sense to have gnome to actually provide some list
of defaults applications (I think KDE does this, giving priority by
default to kde apps), I'm reassigning this bug to gnome (as agreed on
IRC). you may write to 282281@bugs.debian.org and give your further
  opinios there.

thanks to Sebastien Bacher for his assistance on IRC.
