When feeding unhtml plain text files that contain < and/or > it strips
these. Most browser that I know of display these files correctly with
the <> and whatever is in between.

Just save this mail message as a text file and feed it to unhtml and a
browser to see the effect. All the <<>> are gone after it passes thru
unhtml, but note that >><< partially remains.
