Minimalist installation

I have a pos system that run on Ubuntu 

I wanted to use Debian but I want to install something compatible with touch screen and light and I want compatible with any driver 

What do you recommend for installation I’m used to using gnom on Ubuntu as I disable Wayland so we offer 24h support and connection for updates and maintain
